Pumpkin Apple Butter Cupcakes

There are very few flavors that scream fall more than pumpkin and apple and we couldn’t resist combining the two. It wasn’t till recent that we tried apple butter for the first time and we have to say that we are hooked. We instantly knew we had to incorporate it into a dessert and that it would be the perfect pairing with our pumpkin cupcakes. We first start with a pumpkin cupcake, stuff it with apple butter and then top with apple butter buttercream. The result, an explosion of fall!

To decorate the cupcakes we used Wilton tip 1M for the body of the pumpkins. First pipe the two outside edges starting at the bottom and pipe up toward the top. Then pipe two more lines up the middle. Next use tip 4B for the stem and 352 for the leaves.

Pumpkin Apple Butter Cupcakes

Ingredients
  

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 2 tsp cinnamon
  • 2 1/2 tsp pumpkin pie spice
  • 1 cup vegetable oil
  • 4 eggs
  • 1 1/2 cup brown sugar
  • 2 cups pumpkin puree
  • 2 tsp vanilla
  • 1/4 cup apple butter

Instructions
 

  • Preheat oven to 350 degrees. Line cupcake pans with liners.
  • In a medium bowl mix together flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice and set aside.
  • In a stand mixer fitted with a whisk attachment mix together vegetable oil, eggs, brown sugar, pumpkin puree and vanilla until combined.
  • Slowly add the dry ingredients to the wet ingredients and mix until fully incorporated.
  • Fill each cupcake tin 3/4 full and bake for approximately 20 minutes or until a toothpick comes our clean with just a few crumbs.
  • Allow cupcakes to cool for 5-10 minutes then remove from tin to fully cool.
  • Once cupcakes are fully cooled, use a pairing knife to cut a small hole in the center of each cupcake about 3/4 of the way down. Fill the hole with approximately 1 tsp apple butter. Top each cupcake with apple butter buttercream.

Apple Butter Buttercream

Ingredients
  

  • 2 cups unsalted butter room temperature
  • 2 pound bag powdered sugar
  • 1/2 cup apple butter

Instructions
 

  • In a stand mixer fitted with a paddle attachment, cream the butter.
  • With the mixer on low speed, add the powdered sugar one cup at a time. Occasionally stop the mixer to scrape down the sides and bottom of the bowl with a rubber spatula.
  • Once the powdered sugar is mixed in, add the apple butter and mix until incorporated.
  • Increase speed to high and whip for 5 minutes stopping once to scrape down the sides and bottom of the bowl.
  • Stir slowly for about a minute to remove air bubbles.
