French toast is one of our all time favorite breakfast dishes. Today we are showing you how to take this classic and turn it into something new. Roll ups are a fun way to serve French toast and they are not only easy to make, but the flavor possibilities are endless.
The flavor we are sharing with you today is apple pie. Although this flavor is a little more time consuming than others, it is just too good not to share. The first thing you will need to do is prepare the apple pie filling. This will take about 20 minutes and is longest part of the process. We like to make the filling the day before and then when we get up in the morning the roll ups come together fairly quickly. The filling will need to be stored in an airtight container in the frig overnight.
Once you have the filling made the next thing you need to do is prep the bread slices. First, cut the crust off each bread slice. Once the crust is cut off, use a rolling pin to flatten the bread. Apply your filling and then roll up. Since this was a thicker filling we spooned the filling down the center of the bread apposed to spreading on the whole piece. If you were filling your roll ups with something like Nutella or peanut butter then we would recommend spreading a layer on the whole piece of bread.
After all your roll ups are made, make your egg mixture and heat your pan. Dip each roll-up in the egg mixture and place in your heated pan. Make sure to rotate the roll ups about every 30-45 seconds so all sides are cooked evenly.
We served ours with syrup and a little extra apple filling. You can also dip each roll up in cinnamon-sugar. Mix together some cinnamon and granulate sugar and then as soon as you remove the roll up from the pan roll it in the mixture to coat. If you want to take it up another notch, drizzle with caramel sauce!

Apple Pie French Toast Roll Ups
Ingredients
- 3 cups diced apples skin removed
- 2 tsp lemon juice
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 tbsp corn starch
- 1/2 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
- 1 cup water
- 10-12 slices bread
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla
Instructions
- Toss diced apples in lemon juice and set aside.
- In a large sauce pan, combine both sugars, corn starch, cinnamon, nutmeg and salt. Pour in the water and whisk together. Cover and heat over medium heat until boiling.
- Once boiling, cook for 2 minutes stirring occasionally.
- Add apples and bring back to a boil. Simmer, stirring occasionally until apples are tender. (about 10-15 minutes).
- While the apples are cooking, cut off the crust of each slice of bread. With a rolling pin roll the bread slices flat.
- Once the apples are done, remove from the heat. Add about 2 tablespoons of the apple pie filling to each bread slice and then roll up.
- In a shallow dish whisk together the eggs, milk and vanilla.
- In a non-stick frying pan, heat a little butter over medium heat. (You can also use cooking spray, coconut oil, etc. if you prefer). Dip each roll in the egg mixture then place in the pan (we usually do about 5 at a time). Turn the roll ups about every 30 seconds until all sides are golden brown.
- Serve immediately with syrup.
