In a large sauce pan, combine both sugars, corn starch, cinnamon, nutmeg and salt. Pour in the water and whisk together. Cover and heat over medium heat until boiling.
Once boiling, cook for 2 minutes stirring occasionally.
Add apples and bring back to a boil. Simmer, stirring occasionally until apples are tender. (about 10-15 minutes).
While the apples are cooking, cut off the crust of each slice of bread. With a rolling pin roll the bread slices flat.
Once the apples are done, remove from the heat. Add about 2 tablespoons of the apple pie filling to each bread slice and then roll up.
In a shallow dish whisk together the eggs, milk and vanilla.
In a non-stick frying pan, heat a little butter over medium heat. (You can also use cooking spray, coconut oil, etc. if you prefer). Dip each roll in the egg mixture then place in the pan (we usually do about 5 at a time). Turn the roll ups about every 30 seconds until all sides are golden brown.
Serve immediately with syrup.
Notes
If you want to take it up a notch, once you remove each roll up from the frying pan immediately coat with a cinnamon-sugar mixture. For an extra sweet treat, drizzle with caramel sauce!
