Healthier Zucchini Bread

Ingredients
  

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 tablespoon cinnamon
  • 1 teaspoon salt
  • 3 eggs
  • 1 cup unsweetened applesauce
  • 1/3 cup raw honey
  • 1 tablespoon vanilla extract
  • 2 cups grated zucchini

Method
 

  1. Preheat oven to 350 degrees and grease a 5"x9" loaf pan.
  2. In a medium bowl whisk together flour, baking soda, baking powder, cinnamon and salt and set aside.
  3. In the bowl of your stand mixer fitter with the paddle attachment, beat together the eggs, applesauce, honey and vanilla.
  4. With the mixer on low speed, slowly add the flour mixture until combined.
  5. Stir in the zucchini.
  6. Pour batter into loaf pan and bake for approximately 60 minutes or until toothpick comes out clean. Cool in the pan for 10 minutes before removing.
