Chocolate Cake

Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 3/4 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup hot water

Method
 

  1. Preheat the oven to 350 degrees. Spray three 6-inch round cake pans with cooking spray and line with parchment paper.
  2. Combine the flour, sugar, cocoa, baking soda, baking powder and salt into the bowl of your stand mixer fitted with a paddle attachment and mix on low speed until combined.
  3. In a separate bowl, whisk together the buttermilk, oil, eggs, water and vanilla.
  4. With the mixer on low speed, slowly add the wet ingredients to the dry ingredients and mix until combined. Scrape the sides and bottom of the bowl and mix a little longer to make sure everything is fully incorporated.
  5. Divide the batter between the prepared pans and bake for about 20 minutes, until a toothpick comes out clean.
  6. Cool in the pans for 10 minutes, then turn them out onto a cooling rack and cool completely.
