Huckleberry Sweet Rolls with Lemon Glaze

Who doesn’t love a good sweet roll! There are so many things we love to bake and sweet/cinnamon rolls are definitely at the top. We love how you can change up the filling and topping to create something completely new and different. Today we are sharing with you our huckleberry sweet rolls with lemon glaze.

Sweet rolls may seem intimidating to make, but this recipe is so easy and will be bound to become a favorite of yours. The dough comes together so easy, then after an initial rise you roll the dough and fill to your liking. We created a filling with butter, sugar, lemon, flour and salt. When spreading the filling on the dough make sure to get all the way to the edges. That way even the end rolls have filling spread throughout the entire roll. The berries will get sprinkled on after you spread the filling. We are using huckleberries in this recipe, but if you don’t have access to huckleberries you can use blueberries. Fresh or frozen berries will work, but if you use frozen make sure to thaw and drain the berries.

After filling your rolls it’s time to roll and cut them. We highly recommend using dental floss to cut your rolls. After trying this trick you will never cut your rolls any other way. When using a knife, you risk smashing the dough and squishing out any delicious filling in the middle. Take a piece of plain dental floss, slide under the end of the roll, cross the two pieces over the top and pull tight. Look at that beautiful clean slice!

Even though these sweet rolls are easy to make, they do take some time since you need to allow time for the dough to rise. Make the rolls the night before so all you have to do in the morning is bring the dough to room temp and bake. After you have cut your rolls and placed in the pre greased baking dish, cover with plastic wrap and refrigerate overnight. In the morning, remove the rolls from the fridge and allow to come to room temp (about 1 hour) and then bake.

After the rolls are baked, pour on the lemon glaze and serve! You better grab one fast because these will disappear right before your eyes. We hope you love this recipe as much as we do. Huckleberry Sweet Rolls with Lemon Glaze

Ingredients
  

Dough

  • 1 cup warm milk
  • 1 tablespoon instant dry yeast
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 3 tablespoons salted butter room temp
  • 1 egg
  • 3-4 cups all-purpose flour

Filling

  • 4 tbsp unsalted butter soft
  • 1/2 cup granulated sugar
  • 2 tsp lemon zest
  • 2 tbsp flour
  • 1/4 tsp salt
  • 1-2 cups huckleberries

Lemon Glaze

  • 1 lemon juiced
  • 1 cup powdered sugar
  • 1 tbsp milk or cream

Instructions
 

  • In the bowl of a stand mixer fitted with a dough hook, combine the warm milk, yeast, sugar, salt, butter, and egg.
  • Add 3 cups of flour and mix on low speed.
  • Once the flour starts to incorporate into the dough, increase the speed to medium. At this point you will add more flour as needed. You want to get to a point where the dough pulls away from the sides of the bowl. The dough should be tacky, but not stick to your figures and have an elastic consistency . When it comes to bread making you should go by feel.
  • Lightly grease a medium mixing bowl and transfer the dough to the bowl. Cover the bowl with a towel and let rise until the dough is double in size (about 1 hour).
  • Filling: While the dough is rising make the filling. Mix all filling ingredients, except the berries, together until it forms a paste. Set aside.
  • Once the dough has risen, lightly grease a large cutting board or workspace. Punch down the dough and transfer to the greased workspace.
  • Roll the dough into a rectangle that is about 12inch by 18inch.
  • Spread the filling onto the entire surface of the dough making sure to get to the edges. Then sprinkle the huckleberries evenly on top.
  • Tightly roll up the dough lengthwise. Using dental floss, cut the dough into one inch pieces.
  • Place each piece into a greased 9×13 baking dish. Cover and let rise 30-60 minutes.
  • While the rolls rise, preheat the oven to 350 degrees. Bake for about 25 minutes or until they are lightly golden brown on the top.
  • Glaze: While the rolls are baking, make the lemon glaze by mixing all the ingredients together. The glaze can be thinned or thickened by adding more milk/cream or powdered sugar. Pour the glaze over the rolls right before serving.

Notes

Overnight Instructions:  Follow the instruction up until step 10, but no need to let rise 30 minutes.  Immediately wrap the baking dish with plastic wrap and place in the fridge overnight.  In the morning, remove from the fridge and allow to come to room temperature (about 1 hour).
If you are using frozen berries make sure to thaw and drain them before using.
