We’ve been baking a lot of cakes lately and decided to switch things up. We are officially in the season of baking and cookies are one of the most popular treats to bake during the holidays. Our banana nut oatmeal cookies are perfect if you are looking for something out of the norm.
If you are a fan of banana bread and oatmeal cookies you are going to love these! And we have to admit, one of us may have had them for breakfast this morning.
Not a fan of nuts or have an allergy? No problem, just remove them from the recipe. Try substituting the nuts for chocolate chips or make them simple with just the banana flavor. We want to try making them with peanut butter chips next time or maybe toffee bits!

Banana Nut Oatmeal Cookies
Ingredients
- 1 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1 cup brown sugar packed
- 2 large bananas smashed
- 2 eggs room temp
- 1/2 tbsp vanilla
- 1 3/4 cup all-purpose flour
- 2 tsp corn starch
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 3 cups old fashioned oats
- 3/4 cup crushed walnuts
Instructions
- Preheat your oven to 350 degrees
- In your stand mixer fitted with a paddle attachment, cream the butter with the granulated and brown sugar.
- Add the banana, eggs and vanilla until combined.
- Add the flour, corn starch, baking soda, cinnamon and salt and mix until just combined. Make sure not to overmix.
- Stir in the oats and walnuts.
- Cover your baking sheet with parchment paper and spoon tablespoon sizes of dough onto the cookie sheet. Lightly press to slightly flatten the cookie. Place each cookie about 2 inches apart.
- Bake for 10-12 minutes. Allow the cookies to cool for a couple of minutes before removing from the cookie sheet.
