Banana Bread Pudding with Cinnamon Caramel Sauce

The name of this dish may not sound too appealing, but if you haven’t tried bread pudding before then you are missing out. We are a big fan of banana flavored desserts and knew that bananas and bread pudding would be a match made in heaven. We then topped it with some cinnamon caramel sauce and mind blown!

So what is bread pudding? There are a lot of variations for making this dish, but you need four key ingredients to make a bread pudding; day old bread, eggs, milk and sugar. You may often see bread pudding made with rum soaked raisins and served with either a rum, bourbon or vanilla sauce. The best part about this dish is that you can easily create your own variation and it is so simple to make, plus you most likely have all the ingredients on hand. You can also serve it for dinner, breakfast, brunch or made into a savory side dish. It is so versitale and easy that you are going to find it being one of your new favorite dishes to make!

As for the bread it is really your preference on what type you would prefer. We are using French bread, but brioche, challah, Texas toast and even white sandwich bread will work if that is all you have. Regardless the type of bread you use, make sure it is day old (stale) bread. If your bread is fresh there are a couple ways you can stale your bread. If time allows, slice your bread into one inch thick slices, lay on a cookie rack and set out overnight. If you need stale bread the same day then use your oven. Slice the bread into one inch cubes, lay on a baking sheet in a single layer and bake at 300 degrees for about 10 minutes or until the bread is toasted and dry but not brown.

In our opionion every bread pudding should be served with a sauce. It just isn’t complete without it. Pairing our banana bread pudding with cinnamon caramel sauce was a no brainer.

Banana Bread Pudding

Ingredients
  

  • 1 loaf day old french bread cut into 1 inch cubes
  • 4 eggs room temperature
  • 3 cups whole milk
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 4 ripe bananas mashed
  • 1 recipe caramel sauce below

Instructions
 

  • Slice bread into 1 inch cubes, place in a large bowl and set aside.
  • Whisk together eggs, milk, sugars, vanilla, cinnamon and nutmeg.
  • Add mashed bananas and mix together.
  • Pour mixture over the bread cubes and fully coat. Let sit for about an hour.
  • Preheat oven to 350 degrees and grease a 9×13″ baking dish with butter.
  • After the bread has soaked with the custard mixture, add to the greased baking dish and bake for 50-60 minutes or until custard has set and the top is golden brown.
  • While the bread pudding is baking make the caramel sauce.
  • Serve warm with caramel sauce.

Notes

If the top of the bread pudding is starting to brown too much before it is done place some foil over the top.

Cinnamon Caramel Sauce

Servings 2 cups

Ingredients
  

  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tbsp corn syrup
  • 2/3 cup heavy cream
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp unsalted butter

Instructions
 

  • Place the sugar, water and corn syrup in a sauce pan. Place over high heat and stir until the sugar begins to dissolve.
  • Continue to boil without stirring until the mixture reaches a medium amber color and then remove from heat.
  • Carefully whisk in the cream. The caramel will foam, but continue whisking and then add the salt, cinnamon, vanilla and butter until smooth.
  • Transfer to a heat proof container to cool to room temperature.

Notes

Caramel will keep in the refrigerator for up to a month or in the freezer for 3 months.
