How to Make Candy Glass

Candy glass is a really easy and fun way to add a unique decorative aspect to your desserts. The great thing about candy glass is that it can be used for so many different things. You can color or flavor it to fit the theme of what you are making. It can be poured into molds to create specific shapes or lollipops. In this particular case we were using it to make dragon glass for our Game of Thrones cake so we colored it blackish-blue.

  • Clear glass with drops of red food coloring for a Halloween or murder mystery theme.
  • Various colors of candy glass to create a stained glass look

  • Seaglass

There are a few items you will need to make the candy glass. A candy thermometer, sauce pan, cookie sheet and parchment/wax paper. In the pictures below you will notice we did not have the cookie sheet lined with parchment paper. We had sprayed the pan and broke the glass by dropping the cookie sheet on the table. This worked, but we weren’t able to get as large of pieces as we wanted. There were also some sections that wouldn’t come off the cookie sheet very well. We tried another small batch with parchment paper (sadly we forgot to take pictures) and it worked so much better. The glass lifted right off the paper and we were able to break it by hand to get the sizes we wanted.

Candy Glass

Ingredients
  

  • 2 cups sugar
  • 3/4 cup water
  • 2/3 cup light corn syrup
  • candy thermometer

Instructions
 

  • Line a baking sheet with parchment or wax paper.
  • Mix all ingredients together in a medium sauce pan.  If you are adding any color or flavoring do so at this time.
  • Bring mixture to a boil stirring constantly.  Once boiling stop stirring and let it cook until the thermometer reaches 300 degrees.
  • Remove from heat and immediately pour onto your prepared baking sheet.  Allow to harden and cool (about 2 hours).
  • There are a couple different ways to break the candy glass.  If you are not particular on the sizes and shapes you can lift the pan and drop it down on a flat hard surface.  You can continue to do this until the pieces are a desired size.  Another option is to break the pieces by hand.  By lining the pan with parchment paper this allows you to easy pick up the glass and break it by hand.
